I don’t often do food photography but my “day” job gave me an opportunity to photograph a few food items for recipe cards promoting a new program for Luby’s Culinary Services. The recipes are part of their Stealth Health program where they “incorporate higher nutrition and lower or better fats into classic and innovative recipes without altering the high quality and flavor.”

The chocolate avocado muffins pictured below are really, really delicious and turn out so moist  & chocolatey (is that even a word?) – I’ve baked them myself! Grab the recipe (and a few other recipes) over on their site!
